From Seamwork:

A quilted jacket is such a satisfying project, because you really get to work with your textiles and learn some impressive sewing skills. The Easton jacket features an oversized fit and dropped shoulders with a shawl collar and snap closures on the center front. In addition to learning how to quilt the outer fabric, you’ll learn how to line the jacket and finish the collar and hems with bias binding.

For the outer fabric, experiment with chambray, poplin, quilting cotton, denim, twill, and linen. For the inside,  shirting and lawn also work. Go monochromatic with matching shades, pair denim on the outside with a pop of printed lawn on the inside, or experiment with texture or color blocking when you quilt your fabric.
